面粉和水在碗中融合,在案板反复揉搓,经过擀面杖的按压,在面板上的切分拉抻,面条有了自己的筋韧形态。最后倒入锅中,在滚水里浮沉几番。端上的一碗冒着热气的面食,是城市里快节奏人群的慰藉。

超面,在食物慰藉的同时,亦创造了一个关于制面的遐想空间。

The flour and water are combined in a bowl, kneaded repeatedly on a board, pressed with a rolling pin, cut and stretched on a board, and the noodles take on their own sinewy form. Finally, the noodles are shaken into the pot and floated in boiling water for a few times. The steaming bowl of noodles served is a comfort to the fast-paced people of the city. 

ChaoMian, while providing food comfort, also creates a space of reverie about noodle making.


该项目位于杭州市钱江世纪城朝龙汇商场,是一个传统与概念融合的面馆。 “超面”欲通过一个实验性的用餐体验空间,传达出传统制面工艺的讲究与严谨,同时融合当下时代概念性的先锋餐饮理念。整个项目的空间概念,灯光系统和家具设计,从传统制面的工艺和流程中提取原型,进行解构与重组,引发用餐者的好奇与遐想。


Located in the Chaolonghui Shopping Centre in Hangzhou's Qianjiang Century City, the project is a fusion of traditional and conceptual noodle restaurant. Through an experimental dining experience space, “Chaomian” aims to convey the rigour of the traditional noodle-making process, while at the same time integrating the conceptual and pioneering catering concepts of the current era. The spatial concept, lighting system and furniture design of the whole project are extracted from traditional noodle-making techniques and processes, and then deconstructed/reconstructed to stimulate the curiosity and reverie of the diners.

案板撑起整个面馆的空间系统

A spatial system that supports the entire noodle shop with a ‘plate’


超面的空间概念系统源于对案板的解构与重组:多组交替错落的案板,从墙壁到天花板,切切合合,断开又接连,打破了方盒子空间单一的秩序,扩大了空间的层次和维度。


The spatial conceptual system of Superface originates from JK DESIGN's deconstruction and reconstruction of the tabletops: multiple sets of alternating and staggered tabletops, from the wall to the ceiling, cutting and closing, disconnecting and connecting, breaks the single order of the box space, and enlarges the layers and dimensions of the space.

被切开了入口,呈三角状, 揭开容纳内部空间的序列,也使整个内部空间成为被案板包裹的状态。


The cut entrance, in the shape of a triangle, unveils the sequence that accommodates the interior space, and also makes the whole interior space become wrapped by the boards.





有的案板由木板拼接而成,有的案板是金属板,经过精确的切割,采用工字对缝的方式一块块拼接而成。秩序上的融合与统一体现了工艺的严谨与传承,质感上解构了材质的时间性增加了空间的实验性。木头与金属的碰撞,传统与实验性的结合,形成张力又统一的制面空间。

Some of the tabletops are made of wood planks spliced together, while others are metal plates, precisely cut and assembled piece by piece using I-beam seams. The fusion and unity of order reflects the rigour and heritage of craftsmanship, while the texture deconstructs the temporality of the material to increase the experimentation of space. The collision of wood and metal, the combination of tradition and experimentation, forms a tense yet unified space of fabrication.




位于用餐环境中的唯一一根承重柱子,如同一根“擀面杖”支撑着整个案板空间,表面包裹着镜面反光的表皮,在有限的空间内拓展了空间的维度,增强了虚空变化的幻象。

Located in the dining environment, the only load-bearing pillar, like a ‘rolling pin’ supporting the entire tabletops space, is wrapped in a mirror reflective skin, expanding the dimensions of the space within the limited space, enhancing the illusion of change in the void.




金属板、木板和镜面虚虚实实,层叠交错,给传统工艺带来了年轻化未来感的体验,也提供给在这用餐的食客们一个虚幻的无限空间遐想。


Metal plates, wood panels and mirrored surfaces are intertwined and layered, bringing a youthful and futuristic experience to traditional craftsmanship, and providing diners with an illusory and infinite space for reverie.

超面·家具系统 Furniture System


“揉、搓、擀、叠、切、抻” 是制面过程中不可缺少的工艺,使面粉形成了大小不一的团状,扁薄自由的片状,抑或是细细长长的条状。这些变化的形态,成了超面的家具系统演化的依据。

“Kneading, rolling, rolling, folding, cutting, stretching” are indispensable processes in the production of noodles, which result in the formation of doughs of different sizes, flat and thin sheets, or long and thin strips. These variations in form form the basis for the evolution of the furniture system of the ChaoMian.






用餐的空间布局由在空间四周的独立桌位和在中间共享的“流水”长桌组成,在有限的空间里提供多种不同灵活的用餐需求和最大化用餐效率。中间蜿蜒的“流水长席”,由几根细细弯曲的“面条”悬挂着。搓擀成的薄薄“面片”形成平面中扭转的用餐桌,既为用餐团体增加了交流互动,也为快节奏的用餐个体提供了即食即走的一人席空间。

The dining space consists of individual tables around the perimeter of the space and a shared ‘flowing’ table in the centre, providing a variety of flexible dining needs and maximising dining efficiency in a limited space. In the centre is a long, meandering ‘flowing seat’, suspended by a few thin, curved ‘noodles’. The thinly rolled ‘noodles’ form a twisted table in the middle of the plane, which not only increases communication and interaction for the dining group, but also provides a one-person space for fast-paced individuals to eat and go.





正如业主对“超面”的想象,是基奠于传统工艺但是超越时空的。被切割的案板演化的空间系统,“揉搓擀叠切”的工艺转化成家具系统,碰撞与融合,严谨与自由,实现一个解构性的实验空间。走进面馆的食客感知在场的食物、工艺和空间体验都容纳在相辅相成又打破常规的容器中,包容又自由的态度生化出每个食客自由无限的遐想世界。

Just as the owner imagined ‘ChaoMian’, it is based on traditional craftsmanship but transcends time and space. The cutting board evolves into a spatial system, and the process of ‘kneading, rolling, folding and cutting’ is transformed into a furniture system, colliding and fusing, rigour and freedom, to achieve a deconstructive and experimental space. Diners entering the noodle shop perceive that the food, craftsmanship and spatial experience are all contained in a complementary yet unconventional container, and the inclusive yet free attitude creates a world of free and unlimited reverie for each diner.
